  Shiitake Salad

* Serves 10 rolls

Ingredients :

  • 50 g SHIITAKE, finely sliced
  • 50 g OYSTER MUSHROOMS, finely sliced
  • 100 g canned bamboo shoots, julienne strip
  • 50 g carrot, julienne strip
  • 4 shallots, finely minced
  • 3 cloves garlic, finely minced
  • 1 egg
  • 2 tbs sweet soy sauce
  • 150 ml water
  • Cooking oil
  • 1 tbs flour and water
  • 10 lumpia/egg roll skins
  • Salt, pepper and sugar

Methods :

  1. Fry garlic and shallots until fragrant
  2. Add carrots, bamboo shoots and water, cook until soft
  3. Add mushrooms, stir until tender
  4. Add egg, sweet soy sauce, salt, pepper and sugar, mix well. Set aside and allow to cool
  5. Divide mixture into 10 and wrap with lumpia/egg roll skins, secure with flour and water paste
  6. Fry lumpia until golden, remove and serve
