* Serves 10 rolls
Ingredients :
- 50 g SHIITAKE, finely sliced
- 50 g OYSTER MUSHROOMS, finely sliced
- 100 g canned bamboo shoots, julienne strip
- 50 g carrot, julienne strip
- 4 shallots, finely minced
- 3 cloves garlic, finely minced
- 1 egg
- 2 tbs sweet soy sauce
- 150 ml water
- Cooking oil
- 1 tbs flour and water
- 10 lumpia/egg roll skins
- Salt, pepper and sugar
Methods :
- Fry garlic and shallots until fragrant
- Add carrots, bamboo shoots and water, cook until soft
- Add mushrooms, stir until tender
- Add egg, sweet soy sauce, salt, pepper and sugar, mix well. Set
aside and allow to cool
- Divide mixture into 10 and wrap with lumpia/egg roll skins, secure
with flour and water paste
- Fry lumpia until golden, remove and serve
