* Serves 15 pieces
Ingredients :
- 100 g SHIITAKE, minced
- 100 g OYSTER MUSHROOMS, minced
- 50 g onion, minced
- 25 g spring onion, finely sliced
- 25 g celery, finely sliced
- 1 chicken egg
- 1 duck egg
- 2 pieces chicken stock
- 15 lumpia/egg roll skins
- Salt and pepper
- Cooking oil
Sauce Ingredients :
- 200 ml water
- 30 ml sweet soy sauce
- 2 tbs tamarind sauce
- 25 g chilli padis, sliced
- ½ tomato, diced
- ½ onion, sliced
- ½ tsp salt
- 25 g sugar
Methods :
- To make sauce : boil water, add sweet soy sauce, tamarind sauce,
salt and sugar, bring to boil and set aside. Add tomato, onion and
chilli padis into sauce mixture, mix well
- Fry onion until fragrant, add mushrooms, chicken stocks, salt and
pepper, mix well. Put aside and allow to cool
- Beat the eggs, add mushroom mixture, spring onion and celery, mix
thoroughly
- Put 1 tbs of filling on the center of lumpia skin, fold in the sides
and ends to completely enclosed the filling
- Fry until golden brown and serve with sauce
