  Shiitake Salad

* Serves 4

Ingredients :

  • 175 g (¾ cup) BROWN RICE, washed and drain
  • 200 g OYSTER MUSHROOMS
  • 350 ml hot water
  • 1 chicken stock cube
  • 2 shallots, chopped
  • 2 tbs parsley, chopped
  • Butter
  • Cooking oil
  • Salt and pepper

Methods :

  1. Heat 1 tbs of cooking oil and fry shallots over medium heat. Add rice and stir so that the grains are well coated with oil
  2. Dissolve 1 chicken stock cube in measured hot water then pour stock into rice, cover and leave to simmer over low heat for ± 25 minutes or cook in rice cooker
  3. Heat a knob of butter in a frying pan and saute mushrooms until tender, season with salt, pepper and parsley
  4. Serve rice with mushrooms together
