* Serves 4
Ingredients :
- 175 g (¾ cup) BROWN RICE, washed and drain
- 200 g OYSTER MUSHROOMS
- 350 ml hot water
- 1 chicken stock cube
- 2 shallots, chopped
- 2 tbs parsley, chopped
- Butter
- Cooking oil
- Salt and pepper
Methods :
- Heat 1 tbs of cooking oil and fry shallots over medium heat. Add rice and stir so that the grains are well coated with oil
- Dissolve 1 chicken stock cube in measured hot water then pour stock into rice, cover and leave to simmer over low heat for ± 25 minutes or cook in rice cooker
- Heat a knob of butter in a frying pan and saute mushrooms until tender, season with salt, pepper and parsley
- Serve rice with mushrooms together
