* Serves 6
Ingredients :
- 100 g SHIMEJI, thinly sliced
- 100 g chicken meat, diced
- 50 g lemon basil leaves
- 1 stalk lemongrass, finely chopped
- 5 stalks spring onion, thinly sliced
- 2 bay leaves
- 3 tbs cooking oil
- Banana leaves and toothpicks, to wrap
Ground Spice Ingredients :
- 2 chilis, seeds removed
- 5 cloves shallots
- 3 cloves garlic
- 1 cm turmeric
- 5 candlenuts
- Salt, to taste
Methods :
- Combine well chicken meat and ground spice ingredients
- Sauté chicken meat together with bay leaves and lemongrass
- Add in mushrooms, lemon basil leaves and spring onion, mix well
and remove
- Allow pepes mixture to cool then wrap in banana leaves and steam
for ± 15 minutes until cooked
