  Shiitake Salad

* Serves 2

Ingredients :

  • 250 g OYSTER MUSHROOMS
  • 300 ml coconut milk
  • Vegetable oil
  • 2 kaffir lime leaves
  • 1 bay leaf
  • 1 lemongrass
  • 1 tsp salt
  • ½ tsp sugar

Spice Ingredients :

  • 3 chillis, seeds removed
  • 3 cloves shallots
  • 2 cloves garlic
  • 2 candlenuts
  • 5 slices galangal
  • ½ tsp coriander
  • ¼ tsp pepper

Methods :

  1. Finely ground spice ingredients, then fry them until fragrant
  2. Add bay leaf, kaffir lime leaves, lemongrass, salt and sugar
  3. Pour in coconut milk, continue stirring until it boils
  4. Add in mushrooms, cook until thickens and the oil rises
