  Shiitake Salad

* Serves 4

Ingredients :

  • 500 g OYSTER MUSHROOMS MIX (White, Pink, Yellow and Brown), sliced and parboiled for ± 5 minutes
  • 100 g variety of green salad
  • 2 red chillis, finely chopped
  • 2 tbs margarine/butter
  • 50 g onion, thinly sliced

Sauce Ingredients :

  • 3 cloves garlic
  • 3 tbs lemon juice
  • 50 ml olive oil
  • Salt and sugar, to taste

Methods :

  1. To make sauce : blend sauce ingredients until smooth
  2. Fry red chillis with margarine/butter in low fire until tender. Remove and set aside
  3. Arrange green salad on the plate, place parboiled mushrooms and pour sauce
  4. Decorate with onion and fried chillis on top. Serve
