MUSHROOM CURRY
* serves 2
Ingredients:
- 200 g oyster mushrooms, cut into quarters
- 200 ml coconut milk
- 1 kaffir lime leaf
- 1 bay leaf
- ½ tsp salt
- ½ tsp sugar
Spice ingredients:
- 4 shallots
- 2 cloves garlic
- 3 candlenuts
- 2 red chillies
- 1 cm ginger
- 2 cm turmeric
- 1 cm galangal
- 1 stalk lemongrass
- ½ tsp coriander
- ¼ tsp pepper
- 3 tbs cooking oil
Methods:
- Finely ground spice ingredients, then fry them until fragrant. Add in kaffir lime leaf, bay leaf, sugar and mushrooms, stir well
- Add coconut milk and salt, gently stir at the same time
- Cook until coconut milk comes to boil, remove and serve
