TEMPURA UDON

Ingredients:
  • 150 g udon
  • 500 ml water
  • 5 g bonito flakes
  • 5 g nori
  • 80 g ginger, sliced
  • 50 g garlic, peeled
  • 50 g onion, sliced
  • 100 g green onion, sliced
  • 5 tsp soy sauce
  • 1 tsp umamitake beef
  • ½ tsp salt
  • 1 tsp pepper
  • 1 tsp sugar
 
Tempura ingredients:
  • 150 g chicken breast fillet
  • 3 champignon mushrooms
  • 150 g tempura flour
  • 2 eggs
  • 100 ml water
 
Methods:
  1. Once water comes to boil, add ginger, garlic, onion, green onion, nori and bonito flakes, simmer the mixture for 10 minutes, strain the soup from the ingredients
  2. Add soy sauce, umamitake beef, pepper, sugar, salt and udon into the soup mixture. Boil again until udon is cooked
 
Methods to make tempura:
  1. Combine tempura flour, water and eggs, mix well
  2. Coat chicken breast fillet and champignon mushrooms with flour mixture
  3. Deep fry until golden brown
